Mackerel Croquetas

    Cook the jacket potatoes in water or in the microwave

    Open the tins of mackerel fillets and reserve the oil for cooking

    Peel and mash the potatoes with a fork

    Add the egg, seasoning, fish and 1/3 of the breadcrumbs

    Chill for 10 minutes

    Shape 12 small pucks by hand and coat with the remaining breadcrumbs

    Brown the palets in a frying pan with the oil from the tin, turning them from time to time
  • Step 8
    Serve with a green salad and lemon wedges to squeeze over the croquetas before eating

Add grated lemon zest or a little garlic to the filling.
