Luzienne sardine tart

Marry our Luzienne Sardines with grated potatoes, egg, garlic, onion and chopped parsley for a gourmet tart with no pastry and a tangy Basque flavour!

  • Step 1
    Preheat the oven to 220 °C (gas mark 7/8).
  • Step 2
    Peel and grate the potatoes, garlic and onion.
  • Step 3
    In a bowl, combine all three ingredients nicely with the seasoning and parsley.
  • Step 4
    Thoroughly drain any excess juices and add the egg.
  • Step 5
    Heat up a little oil in a warm frying pan and pour in the mixture, spreading it out evenly and flattening it.
  • Step 6
    Place the sardines on top, pressing them lightly down. Reserve the sauce and oil from the tins.
  • Step 7
    Reduce the heat and cook for about 10 minutes untouched until lightly coloured on the sides.
  • Step 8
    Slide onto an oven-safe baking tray and bake for 10 minutes, until achieving a nice golden brown colour.
  • Step 9
    Serve together with a green salad and the reserved sardine sauce, so everyone can spoon on as much as they like!
Tips
  • Try this recipe with our different sardines in sauce (two chillistapenadetomato, …) to vary the flavours and the pleasure!
  • Add slices of Basque Country cheese before placing the tart in the oven.
  • Thoroughly draining any excess juices prior to cooking guarantees more hold and crispness.
  • If you used a frying pan with a detachable handle, you can simply pop it in the oven to bake the tart (without the handle of course).
