Mini-Mac Appetisers
Go for variety to impress your guests by making these little burger-style canapés with blinis, fromage frais and our full range of fish spreads: subtle rillettes, melt-in-your-mouth creams and fine iodised mousses that are simply spread on!
All ingredients
2 x 60g tins of la belle-iloise spreads
30 mini blinis
50 g fromage frais
A choice of herbs, seeds, spices, fish eggs, condiments
Let's get started

Step 1Reheat the blinis in the oven for 1 minute or 30 seconds in the microwave

Step 2Spread a tin of the spread on 7 blinis, then cover with another blini.

Step 3Garnish with a touch of fresh cheese and herbs, seeds, spices, fish eggs, condiments, etc.
For extra indulgence, add a little surprise inside before putting the second blini back on. Here are some examples of flavour combinations:
- Tuna rillettes with green pepper and a piece of sour fruit (green apple or kiwi) for texture and flavour contrast
- Sardine cream with candied ginger or pink peppercorns for flavour contrast
- Salmon cream with salmon egg or wasabi for a 2-step effect in the mouth
- Thoionade with feta or mozzarella to contrast the strong flavour.
- Tuna mousse with pumpkin seeds or pine nuts for crunch
- Lobster mousse with fresh coriander or chervil for a subtle touch
If you are making a lot of blinis, use a piping bag to fill them rather than spreading them.
If the second blini doesn't stick well, add a little bit of cream cheese.
