Carrot Salad with Sardine Flakes Délices de Carthage

From Carthage to Djerba... Fresh and generous, this salad is inspired by a Tunisian culinary tradition called Oumek houria, which means ‘Mother the Fairy’, and consists of a cold starter of cooked and spiced carrots. Thanks to our Délices de Carthage crumble and its delicious combination of oriental flavours, you can make this salad in 15 minutes, including 10 minutes cooking time: simply place some carrot strips in the oven, combine them with the crumble and leave to cool before enjoying!

All the ingredients

  • 2 tins of 80g of Flaked Sardine Carthage Delight

  • 4 new carrots

  • A handful of crushed almonds (15g)

  • A few pomegranate seeds (20g)

  • 40g cooked chickpeas

  • 60g rocket salad

  • A few leaves of coriander or flat-leaf parsley

  • Step 1
    Using a vegetable peeler, cut the carrots into tagliatelle
  • Step 2
    Cook the carrots in boiling salted water for around ten minutes, checking with the tip of a knife
  • Step 3
    Drain the carrots and mix with the Flaked Sardine Carthage Delight
  • Step 4
    Add the almonds, chickpeas, pomegranate seeds and rocket and mix well
  • Step 5
    Chill for at least 1 hour
  • Step 6
    Sprinkle with chopped coriander or chopped parsley and serve
Tips

You can add a few pinches of cumin to taste.
