Learn moreFished off the coast of Brittany between Saint-Guénolé, in Finistère, and La Turballe, in the Loire Atlantique, when the season is at its peak and the sardines are at their plumpest and tastiest, our sardines de garde are identified as exceptional sardines as soon as they are caught.
Selected for the superior quality of their flesh and their specific fat content, we process them ultra-fresh and with the utmost care, using delicate attentions and precise gestures handed down from generation to generation. They are trimmed and tinned by hand, one by one, togive full expression to the traditional skills of the belle-iloise. Carefully lined up, they are presented ‘blank’, i.e. with the belly, the most fragile part of the fish, facing upwards, a perfect guarantee of quality.
Simply dressed with a fruity extra virgin olive oil specially chosen to preserve them to perfection and enhance their flavour, their quality is checked after production by the experts on our tasting panel. Once approved, they are stored at the Conserverie for several years to allow time to do its work, just like a great vintage wine...
Produced in special series and limited quantities, our sardines de garde are destined to delight the most discerning connoisseurs! When you open the tin, take a moment to savour the result... When you look at them, you'll see beautiful sardines with shiny silvery bellies in a bath of golden olive oil. To the taste, iodine and fruity flavours blend gently and delicately for an unequalled pleasure for the senses...
The best way to enjoy them? On their own, with a slice of bread and a touch of salted butter. Delicious as they are, you can also choose to perfect the maturing process by leaving them to age a little longer... they'll be all the better for it! Keep them at room temperature, away from light, and turn them over regularly - every 3 to 6 months - so that the oil impregnates the flesh evenly.
Rich in omega-3, vitamin D, calcium and phosphorus, sardines de garde, like all sardines in oil, offer exceptional nutritional value, preserved for years until you open the tin and enjoy them.
