La belle-iloise canned Germon tuna is unique. Made only with Germon tuna, the least fatty (120kcal per 100g), the richest in protein (27g per 100g) and the most gourmet of the 7 different commercial species, they stand out for their exceptional flavours and the preserved quality of the flesh: white, melting and very delicate. The exceptional quality of our tinned tuna bellies is testament to this.

Tuna is the great ocean runner that swims around the globe. A tireless athlete, it is one of the fastest creatures in the sea. A highly migratory species, it can be found in all oceans. Because of its large size and strong appetite, it is a predator of small fish: anchovies, sardines, mackerel and herring.

The tuna we work with, the Germon, is one of the smallest species of tuna: 40kg maximum for a size of up to 1.20 metres. Less threatened, it represents 4% of the tuna fished. It is a deep-sea fish, preferring temperate waters. It moves only with the tuna of its species, and does not mix with others during migrations. Germon fisheries are found in the North and South Atlantic, the North and South Pacific, the Mediterranean and the Indian Ocean, but only when the water is between 10°C and 25°C.

The white Germon tuna from la belle-iloise is always fished without FADs (Fish Aggregating Devices), at maturity, outside the reproduction periods. As proof of this, our specifications prohibit the purchase of any tuna under 8kg, considered by scientists to be juvenile. As they have not yet reproduced, fishing them would prevent the next generation from taking over.Concerned about its impact and committed to doing the right thing, belle-iloise has set itself apart from the majority of buyers by adopting this purchasing rule. The customary code divides tuna into 3 sizes: 0-4kg, 4-7kg and >7kg. We are voluntarily increasing the requirement to 8kg and over.

We also prefer pole and line fishing for tuna, using one line and one hook, so one fish at a time. With this more respectful method, the tuna is of better quality after fishing. It preserves all its flavour and freshness.
